A simple and quick soda bread recipe.
450g flour - wholemeal, spelt, white, or a mixture
50g porridge oats
5g salt
1 teaspoon Bicarbonate of Soda
25g golden syrup or honey
350ml buttermilk, sour milk, or milk with a tablespoon of rice vinegar or lemon juice
Mix all the dry ingredients together well, then add the mixed liquids and combine quickly by hand, without over-working. You should have a soft and still slightly-sticky dough.
On a lightly-oiled baking tray and with floured hands, shape into a round about 6cm high and then almost cut through with a sharp knife into quarters.
Bake in a hot oven at 200°C for around 50 minutes until golden and it sounds hollow when tapped on the bottom
This doesn't keep very well, so either freeze some of it or eat it all quickly.
