A piquant and spicy red sauce from the Canary Islands. Goes well with Patatas Canarias2-3 tablespoons red wine vinegar
2 garlic cloves, peeled and roughly chopped
6 or 7 slices of red jalapeño peppers from a jar
6 or 7 Peppadew peppers, or 1 large roasted jarred red pepper
1 teaspoon ground cumin
2 teaspoons of paprika - any of sweet, smoked or hot works
up to 100ml olive oil
Place all the ingredients into a narrow jug and blend with a stick blender until smooth - you can hold back some of the vinegar and/or olive oil and adjust to taste whilst blending.
Will keep in a jar in the fridge for a week or two
