180g plain flour
½ tsp bicarbonate of soda
120g soft butter
150g light brown sugar, or 50/50 with caster sugar
1 medium egg
1 teaspoon vanilla extract
130g chocolate chunks
Beat the butter and sugar together until fluffy
Mix in the egg and vanilla extract and beat more until well mixed
Stir in the flour, bicarbonate of soda, chocolate chips and a good pinch of salt
Dollop on to grease-proof paper on a couple of baking trays - you should get between 8 and 10. Allow room for spreading
Bake for 8-10 minutes at 160°C fan - the cookies should remain soft in the middle
Allow to cool slightly - they will harden up as they do so - then eat, or move onto a wire tray to cool completely
